Who else dreads having to prepare and cook the big Thanksgiving meal? It’s always something everyone looks forward to, but it can be a real chore for those who are making it, especially when there are a lot of complicated recipes! We know there are probably lots of traditions that can’t be overlooked, and shouldn’t be for that matter. But, we wanted to share with you a few really easy & simple vegetable recipes to use this Thanksgiving in addition to those special dishes you know and love each year.
We are using all the vegetables we bought from our Trader Joe’s haul (be sure to read all about the extra goodies you need to get before they sell out!).
We bought these brussels sprouts on the stalk from Trader Joe’s. Simply cut them off the stalk, trim off the bottom of the brussels sprout, an pull off any of the outer leaves that aren’t looking fresh. Then cut them in half. Think of them as tiny cabbages!
We put them on the same cookie sheet or roasting pan as the pre-cut butternut squash we bought and tossed everything with olive oil, salt and pepper. That’s it!
To prepare the bag of sweet potatoes, we just washed them off to make sure they were nice and clean.
Then, took a fork and poked holes all around and wrapped it up in sheet of tin foil. Exactly like a regular baked potato.
We tossed them all in a 400 degree oven and let the oven do the work! We roasted the top pan of veggies for 40 min, and let the potatoes stay in for an hour. Just be sure those brussels sprouts are cooked through and are no longer crunchy (this will ensure they won’t be bitter!)
Oven roasted vegetables are one of my favorite ways to prepare them. Everything turned out delicious!
This was Tammy’s first time trying brussels sprouts…she was a fan! If you’ve never tried them, go out on a limb and give those babies a good roasting! They taste similar to broccoli when roasted up like that.
A little pat of butter and some salt and pepper and these baby sweet potatoes (I loved them small!) were ready to go.
Green beans were also part of our menu. Who doesn’t like a good green bean for Thanksgiving? Instead of the gooey ol’ Green Bean Casserole, we wanted to keep it fresh and simple like everything else. We tossed the bag of already prepared green beans (thanks Trader Joe’s!) into a big skillet and sauteed them with olive oil til they were firm but not crisp. We seasoned to taste with salt and pepper. Once out of the skillet and in a pretty dish, we tossed in some of those yummy crispy fried onions. SO GOOD!!!
Adding fresh and simple vegetable dishes to your meal isn’t only delicious, it’s also a great healthy option. We seriously couldn’t keep our hands off all of these dishes. As you can tell, we literally used olive oil, salt and pepper for everything! The best part is, you could use these dishes any time of the year!
